These are the most DELISH muffins we have found. Any type of fruit can be substituted in for the bananas. The original recipe Bailey found was a blueberry muffin. That day we just had bananas so Bailey decided to try it out and they turned out AMAZING!
Preheat your oven to 400 degrees. Line your muffin pan with muffin liners.
Combine 1 1/2 cups four, 3/4 cup sugar, salt and baking powder.
Place vegetable oil into a 1 cup measuring cup; add the egg and enough milk to fill the cup. Mix this with flour mixture.
Cut bananas into small chunks. Fold in the bananas.
Fill muffin cups right to the top, and sprinkle with crumb topping.
To make the crumb topping: Mix together 1/2 cup sugar, 1/3 cup flour, 1/4 cup butter, and 1 1/2 tsp cinnamon. Mix with a fork, and sprinkle over muffins before baking.
Bake for 20-25 minutes or until toothpick comes out clean.
These are REALLY DELISH muffins. We have tried blueberries in the recipe also and they are AMAZING as well. Get creative and add fruit and or nut of your choice. Enjoy!!
Banana Muffins
1 1/2 cup flour
3/4 cup sugar
1/2 tsp salt
2 tsp baking powder
1/3 cup vegetable oil
1 egg
1/3 cup milk
1 cup diced bananas
Crumb Topping:
1/2 cup sugar
1/3 cup flour
1/4 cup butter, cubed
1 1/2 tsp ground cinnamon
