Banana Muffins

These are the most DELISH muffins we have found.  Any type of fruit can be substituted in for the bananas.  The original recipe Bailey found was a blueberry muffin.  That day we just had bananas so Bailey decided to try it out and they turned out AMAZING!

Preheat your oven to 400 degrees.  Line your muffin pan with muffin liners.
Combine 1 1/2 cups four, 3/4 cup sugar, salt and baking powder.
Place vegetable oil into a 1 cup measuring cup; add the egg and enough milk to fill the cup.  Mix this with flour mixture.

Cut bananas into small chunks.  Fold in the bananas.

Fill muffin cups right to the top, and sprinkle with crumb topping.

To make the crumb topping:  Mix together 1/2 cup sugar, 1/3 cup flour, 1/4 cup butter, and 1 1/2 tsp cinnamon.  Mix with a fork, and sprinkle over muffins before baking.

Bake for 20-25 minutes or until toothpick comes out clean.
These are REALLY DELISH muffins.  We have tried blueberries in the recipe also and they are AMAZING as well.  Get creative and add fruit and or nut of your choice. Enjoy!!

Rosemary Dijon Chicken Thighs

This recipe is by far the best chicken recipe our family has found.  It is REALLY easy to make and both kids just love the flavor in the chicken.  This is a great time to really stress to the kids to wash their hands REALLY good after handling the chicken.
In a large bowl, combine all ingredients and cover.  The chicken needs to sit in the marinade in the refrigerator for at least two hours so plan for that. We usually throw together before work and let sit all day.

Preheat the oven to 450, put chicken in a baking dish.  Put the dish on the middle rack of you oven and bake for 20 minutes.  Turn on the broiler and move dish up to the top rack.  Broil for 10 minutes or until chicken is well-browned.
Serve the chicken with your choice of side dishes.  Bailey and Brady love pasta!  We served it recently with spaghetti and our homemade pasta sauce!  We usually make big batches of the sauce and freeze in separate freezer bags.  All we had to do this night was thaw the sauce out and reheat it in a pan.
WOW now that is DELISH!  Both kids were members of the clean your plate club:)

Perfect Pancakes

Bailey found this recipe and as always has figured out a way to add her own special touch.  It is THE MOST DELISH and FLUFFIEST pancake recipe we have found. Forget box pancake mix! This is just as quick but even better.

The first step is to make your "butter milk" as Bailey says.  You are souring the milk.  Let this set for 5 minutes.

Combine your dry ingredients into a bowl.
Whisk egg and melted butter into the sour milk.
Pour dry ingredients into wet ingredients and whisk until lumps are gone.
Heat large skillet and coat with cooking spray.

Pour 1/4 cupfuls of your batter sportily on skillet, and just like any other pancake batter, wait for bubbles to appear.
While you wait for bubble this is where Bailey likes to get creative.  This time she added banana slices and chocolate chips. She has also used fresh blueberries.  The sky is the limit!  After bubbles appear flip pancakes  until the other side is nice and brown as well.
Serve pancakes and ENJOY!
It is really that simple!  We have said it before and will say it again, WHY BUY mix when you can MAKE!  Way more fun that way!

Here are Baileys first pancakes of the summer.  They are plain pancakes served with Huckleberry syrup!  Wow so DELISH!

Homemade Spaghetti Sauce

Do you love the spaghetti sauce in a jar?  Well making it from scratch is easy and way more delish!!  Brady will show you how!  In this recipe you do use a knife and stove top.  Always make sure your parents are near to help you out.
With parent support, chop the tomatoes into sections.  At this point you can put tomatoes and onion into food processor to finely chop or leave as chunks.

Melt butter in a medium skillet over medium heat.  Add diced onion and tomato to skillet and cook until they start to break apart.  Next put in the spices as well as the olive oil.  Very carefully stir in your flour and cook the mixture until it starts to thicken up.

This usually takes about 5 to seven minutes.  Stir in the water to break up any lumps made by the flour.  Mix garlic into the sauce and simmer another 5 minutes. If you family likes chunky sauce serve as is or put into a blender to make it smooth.

Serve on top of your favorite Type of pasta and enjoy!  We make big batches and freeze some for later.  Why buy when you can make!

Spaghetti Sauce
1 tblsp butter
8 small tomatoes, diced (we like Roma tomatoes)
1/2 medium sweet onion, diced
1/4 cup chopped fresh basil
1 tblsp flour
1/4 cup water
1 tsp olive oil
1 teaspoon garlic salt
salt and ground black pepper to taste
1 clove gralic grated
