Our kids love to chop vegetables. Of course we are there making sure they are VERY careful. This recipe gave them lots of practice. Also fun for them to peel veggies. Great job for kids in the kitchen.
Heat your oven to 450 dgrees. Line a cookie sheet with aluminum foil and rub on a small amount of olive oil.
Peel and cut 1 1/2 lbs sweet potatoes into long pieces 3/8 inch thick.
Toss with olive oil to coat.
Cover with red pepper powder, cayenne powder,
Garlic Powder, Onion powder,
and cumin. Toss to coat evenly.
Place potatoes on a cookie sheet in a single layer. Bake for 15 minutes. Turn with tongs and bake for 10 more minutes on until desired crispyness.
These are SOOOO DELISH. They are also a nice change from plain old baked potatoes as a side. ENJOY!!!
This is a great recipe to go along with my families plan of trying to eat clean (cutting down on processed foods). This roast beef is so tender and delish, it is also a great bulk recipe to allow your family lunch meat for a week of school lunches. If you do not want the leftovers start with a smaller beef eye round roast and use less of the other ingredients. For our family of four with this recipe we had LOTS of leftovers.
Heat oven to 325 degrees. Trim any excess fat off eye round. Make 8 deep slits with sharp knife into the meat and stuff 1/2 garlic clove into each slit.
Rub meat with olive oil, black pepper, and sea salt. Heat a large skillet over medium-high heat. When hot sear the meat on each side for 2 minutes.
Place seared meat in 7X11 inch roasting pan.
Deglaze skillet with 1 cup water, with wooden spoon scrap up bits of seared meat into water.
Pour mixture over the roast beef in the pan.
Remove leaves from fresh rosemary stem and coarsely chop. Rub into the meat.
Place in the oven and roast for 1 1/2 to 1 3/4 hours, or until internal temp. is 135 degrees (for medium doneness). Let meat rest for 15-20 minutes where internal temp will rise to 145. Slice thinly and serve. Pan juices can be thicken with small amount of flour and used as a gravy.
OHHH SO DELISH!!!! We found this recipe and thought it would be the perfect dessert our family cookout. Who doesn't like cherry limeades!? The highlight for the kids was trying our our new cherry pitter. Fresh cherries are amazing right now! Our family loves them! Well now they love them even more with this fun little gadget! If you do not have a cherry pitter, our recipe source, Recipegirl.com, says a straw works well also. You will also need a bunt pan for this recipe.
Here the kids are having fun with the cherry pitter. You will need to pit and quarter 2 cups fresh cherries.
Helpful tip: make sure you pit the cherries over something that will not stain:)
Preheat over to 325, Grease and flour bunt cake pan. To do this rub butter all over the pan.
Sprinkle flour over the butter and tap out the excess.
Mix together three cups of flour and 1/2 teaspoon of salt in a medium bowl.
In another large bowl, use an electric mixerr to cream together 1 1/2 cups unsalted butter and 3 cups sugar and 1 1/2 teaspoon fresh lime zest
Add 5 eggs one at a time until all are nicely included.
Mix in 1/3 of the flour mixture.
and 1/4 of the (3/4) cherry 7up. Rotate between flour mix and 7up until both are included.
Stir in cherries.
Scrap batter into the prepared bunt pan.
Tap pan on counter several times to get rid of all the air bubbles.
Bake 1 hour and 15 minutes or until sharp knife comes out clean when inserted into the middle of the baking cake. When done pull out pan and place on chopping block to cool for 20 minutes. While cake is cooling prepare cake glaze.
In a medium bowl whisk together 1 1/4 cup powdered sugar, sifted,
2 tablespoons cherry 7up
and 1 1/2 teaspoons freshly grated lime zest.
After 20 minutes of cooling put a serving plate over the pan and flip over. Tap the bottom of the pan gently to loosen the cake if needed.
Let the cake cool completely on the plate before adding the glaze.
The kids throughly enjoyed taking turns drizzling on the glaze.
Our family LOVES bagels. Well of course we were going to attempt to make from scratch. We found a couple of recipes but this one worked the best.
Mix all ingredients into a bowl. We used our mixer but you can just mix by hand.
4 cups bread flour.
1 tblsp sugar.
1 and 1/2 tsp salt.
1 tblsp vegetable oil.
2 tsp instant yeast.
1 1/4-1 1/2 cups warm water. The dough should feel stiff, but add the extra water if it is too stiff or you can't incorporate all of the dry ingredients.
We had to add the extra water!
Place dough on the counter and kneed for about ten minutes or until the dough is smooth.
Finished dough. Took us about 8 minutes for it to look like this.
cut the dough in to 8 equal sized balls and let rest for 10-20 minutes.
During this time preheat oven to 425.
After 20 minutes comes the fun part. Bailey and Brady and I watched this video a few times to make sure we had the technique down.
I know it is sideways...but you can see the technique to making sure the bagel ends come together.
Basically roll one dough ball into a snake. Roll until the snake can wrap around your dominate hand and the ends overlap in your palm. Squish and roll the ends together against the counter.
This takes a bit of practice but bagels do not have to look perfect.
Let your bagels rest on the counter for 20 minutes. While they are resting start a large pot of water to boil and grease a large baking sheet.
After they rest they are ready to boil. Place as many as you can into the pot with our crowding them. Boil each side of the bagel for a minute. Take bagels out and let dry for a minutes. Repeat until all of the bagels have been boiled.
This is the time that you can add toppings if you decide. Whatever you want to add to bagels, put a large amount on a plate and dip one side completely before you put on the baking sheet. We made this batch plain.
Here are some pictures of a batch that we incorporated 1/3 cup of chopped jalapenos. We used the pickled kind from the jar.
Place bagels on baking sheet and bake 8-10 minutes (We cooked them 9 minutes). Then turn bagels over and bake for the same amount of time on the other side.
Enjoy! These so much more delish than store bought bagels and way more inexpensive!!
